Ingredients for Spiced Rice
- Ginger Strips (薑絲): White rice (白米), washed and set aside
- Lemongrass slices (香茅片): As needed

Ingredients for Sour and Spicy Fish (A Ingredients) To prepare chili paste
- Dried Chili (辣椒干): Soaked in hot water, as needed
- Fresh Chili (新鮮辣椒): 1 pc
- Candlenut (石古子, Buah Geras): 3 pcs
- . Belacan Powder (峇拉煎, Belacan粉): 2 tbcp
- Turmeric Powder (黄薑粉): 2 tbsp
Ingredients for Sour and Spicy Fish (B Ingredients)
- Okra (羊角豆): 3 pcs
- Long Beans (长豆): 3 pcs
- Eggplant (茄子): 1 pc
- Tomato (番茄): As needed
- Pineapple (黄梨): As needed
- Vegetarian Cod Fish (素鳕鱼): 2 pcs
Ingredients for Sour and Spicy Fish (C Ingredients)
- Laksa Leaves (叻沙叶): As needed
- Torch Ginger (姜花): As needed
- Lemongrass (香茅): As needed
- Red Chili (红辣椒): As needed
Wet Ingredients:
- Assam jawa 亞參子(Soak in water, then strain to extract Assam water))
- Water 水
Seasoning
- Salt (鹽巴): To taste
- Pineapple Mushroom (菠蘿菇): As needed
- Palm Sugar (棕糖): As needed
Instructions
Spiced Rice Preparation:
- Heat oil in a pan.
- Add sliced ginger, lemongrass, curry leaves, and spices to the pan and sauté until fragrant.
- Once the spices release their aroma, add the washed rice and stir-fry.
- Add mushroom seasoning powder and salt, then continue to stir-fry.
- Transfer the fried rice into a rice cooker, add water, and cook until done.
Chili Paste (using Ingredient A):
- Soak dried chilies and fresh chilies, then blend them into a paste.
- Add turmeric powder, buah geras (if available), and Belacan powder.
- Stir well to combine.
Sour and Spicy Fish Preparation:
- Heat oil in a pan and sauté Ingredient C until fragrant.
- Add the chili paste and Balam powder (a type of spice mix).
- Pour in water and tamarind juice (assam water).
- Add Ingredient B (such as vegetables or tofu).
- Season to taste, cover, and simmer. Once ready, serve and enjoy!
香料飯煮法:
- 熱鍋裡下油。
- 把薑絲,香茅片,咖哩葉和香料子炒香。
- 出香味後,把洗淨的米下鍋炒。
- 放入波羅菇調味粉和鹽巴再翻炒
- 将炒好的米放入飯鍋,加水,煮熟。
用A材料製作辣椒糊:
- 将泡好的辣椒干和新鲜辣 椒攪成糊狀。
- 加入黄薑粉和 buah geras 再加入Belacan 粉。
- 攪勻即可。
酸辣魚做法
- 熱鍋裡將C材料爆香。
- 放入辣椒糊和峇拉煎粉。
- 倒入水和亞參水。
- 放入B材料。
- 放入調味。燜煮。即可享用。
