This hearty and flavorful Vegetarian Yam Rice is a comforting one-pot meal that combines the natural sweetness of yam with savory seasonings and a medley of vegetables. Perfect for a wholesome lunch or dinner, this dish is easy to prepare in a rice cooker. The key to its rich flavor lies in the balance of seasonings and the addition of fried yam cubes, which add a delightful texture.

Ingredients

  • Yam ½ - Dice, rinse it with water and dry it. Fry the yam cubes until golden brown.
  • Dried Mushrooms 4 pcs - Soak in water, dice and stir-fry until fragrant.
  • Green Beans 1 pkt - Rinse with water and dice them.
  • Carrot 1 pc - Rinse with water, peel and dice it.
  • Soy Nuggets 5 pcs - Dice and stir-fry until fragrant.
  • Rrce 5 cups - Rinse with water.
  • Ginger - Finely chopped
  • Beancurds 3 pcs - Cut into cubes, fry until golden brown.
  • Veggie Salted Fish 5 pcs - Fry and tear into small pieces.
  • 芋頭半粒 - 切小塊,洗净,瀝乾水後,炸到金黄色
  • 香菇大朵 4朵 - 浸软切细粒,炒香
  • 四季豆/長豆 1包 - 洗净切細粒
  • 紅蘿蔔 1條 - 洗净切細粒
  • 素香酥雞 5粒 - 切細粒炒香。
  • 米 5杯 - 洗净后用調味料腌15分钟。
  • 小豆干 3片 - 切小塊,炸到金黄色
  • 素梅香鹹魚 5片 - 煎一煎,把煎好的素鹹魚撕成小塊
  • 姜 - 切碎

Seasonings

  • Vegetable stock 美極齋湯/蘑菇精 1-2 tbsp
  • Light soy sauce 醬清 2-3 tbsp
  • Dark soy sauce 香菇老抽 2 tbsp
  • Salt 鹽 1 tsp
  • Sesame oil 麻油 (a little)
  • White pepper powder 胡椒粉 (a little)

Instructions

  1. After rinsing the rice, add a half cup more water than the usual amount of water needed into the rice cooker.  
  2. Add in all the seasonings to the rice cooker, taste and adjust the amount of seasonings if needed.
  3. Let the mixture sit for 15min.
  4. Add mushrooms, soy nuggets, green beans and carrots to the rice cooker and start the rice cooker.
  5. Halfway through cooking, add in the fried yam cubes.
  6. After everything is cooked, add in the fried bean curd cubes and veggie salted fish to the rice.
  7. Mix well and enjoy your meal!

Yam Rice Ingredients

  1. 將米洗净,加入水比平時煮飯多半杯水
  2. 加入调味料,試味
  3. 腌制15分钟
  4. 加入炒香的香菇,素香酥雞,烏龜豆,红蘿蔔,電飯鍋就可以開電煮了
  5. 煮到一半可以倒入炸好的芋头,盖上鍋蓋再繼續煮
  6. 飯煮好了就可加入炸豆干和素鹹魚
  7. 攪拌均匀,就可以享用了。
